Dragon Fruit Chia Pudding Recipe

One day I was notoriously Insta scrolling and came across the amazingly talented @wellnesswithcourtnie and was instantly inspired by her bright, vibrant, and nourishing recipes and captures. During the New Year, we often set new desires for increasing our intake of nourishing and healthy foods and Courtnie makes it super easy (and f*cking stunning!). When you’re eating the rainbow you’ll forget what the word diet means and allow abundance and love to drive your actions.

Dragon Fruit Chia Pudding Recipe

Ingredients 

1/4 cup chia seeds
1 1/2 cup almond milk
1/2 cup coconut yogurt
1 scoop collagen protein
1/4 cup frozen dragon fruit

Optional Smoothie topper

1/2 cup frozen dragon fruit
1/2 frozen banana
1/4 cup coconut yogurt
1/4 almond milk

Directions

1. Soak chia seeds in 1 cup almond milk for at least 2 hours, stirring occasionally until well absorbed. Adding more almond milk if needed
2. Blend dragon fruit with 1/2 cup almond milk until smooth and liquid
3. Separate chia pudding into two bowls
4. Stir in coconut yogurt
5. Add half of the dragon fruit mixture to each bowl
6. Add more coconut yogurt to one bowl to achieve a lighter color
7. (Optional) Blend smoothie topper
8. Layer into a glass, top with smoothie and coconut shreds and enjoy!
